2-Ingredient Fall Mimosa with Apple Cider and Sparkling Wine
Cold apple cider and brut sparkling wine, poured over each other in a chilled flute. Two ingredients, about a minute a glass, and one bottle stretches to eight drinks. The easiest thing you can hand someone on a cold morning that still feels like an occasion.

- 3 oz apple cider, well chilled (90 ml)
- 3 oz brut sparkling wine, well chilled (Champagne, Cava or Prosecco) (90 ml)
Chill the cider, the bottle and the flutes in the fridge for at least 2 hours. Cold liquid holds its carbonation far better.
Tilt the flute to about 45 degrees and pour in 3 oz (90 ml) of cider, filling it roughly halfway.
Slowly top with 3 oz (90 ml) of sparkling wine, keeping the glass tilted. Pour gently to avoid foaming over. No stirring needed.
Taste. Add a squeeze of lemon if it's too sweet, or a splash of maple or cinnamon simple syrup if it's too dry.
Serve immediately.
- Use cloudy refrigerated apple cider rather than shelf-stable apple juice. Juice is usually sweetened and from concentrate, which flattens the drink.
- Brut is the dry end of the sparkling wine scale. Extra dry is sweeter than brut, so check the label.
- For a crowd, one 750 ml bottle plus 3 cups (720 ml) of cider makes about 8 drinks.
- Combine only as you pour, since mixed mimosas go flat quickly.
