Cucumber Margarita Mocktail (Easy Cucumber Lime Mocktail)

This cucumber margarita mocktail is bright, crisp, and lightly fizzy, with fresh lime, orange juice, and a cool cucumber finish. It looks a little special, but it is easy enough for a slow afternoon, brunch with friends, or a sunny weekend drink.

Ingredients

  • 1 medium cucumber peeled and sliced, plus a few extra slices for garnish (about 7 oz / 200 g)
  • 1/3 cup fresh lime juice about 1-2 limes, 80 ml
  • 1 tablespoon agave syrup or honey 15 ml
  • 1/2 cup orange juice 120 ml
  • 1/2 cup sparkling water or soda of your choice 120 ml
  • ice cubes
  • fresh mint leaves for garnish optional

Optional rim

  • lime wedge
  • salt or sugar

Instructions

  • Rub the rim of each glass with a lime wedge, then dip into salt or sugar if desired.
  • Blend the cucumber until smooth. Strain if you want a smoother drink.
  • In a shaker or pitcher, stir together the cucumber puree, lime juice, orange juice, and agave syrup or honey.
  • Gently stir in the sparkling water or soda.
  • Fill the glasses with ice and pour the drink over the top.
  • Garnish with cucumber slices and fresh mint leaves, if using.
  • Serve right away.
