Memorial Day Fruit Salad

This Memorial Day fruit salad is made with strawberries, blueberries, and apple stars for an easy red, white, and blue side dish that’s perfect for BBQs, picnics, and holiday gatherings.

Ingredients

  • 1 Pink Lady apple sliced and cut into star shapes
  • 1 lb strawberries quartered
  • 1 lb blueberries

Instructions

Prepare the Strawberries

  • Rinse the strawberries under cold water and pat them dry well. Quarter them into bite-sized pieces and add them to a large bowl.
  • If your strawberries are a little tart, you can sprinkle them with 1 teaspoon of sugar or drizzle them with a little honey and let them sit for 5 to 10 minutes.

Add the Blueberries

  • Rinse the blueberries gently and drain them well. Pick out any soft berries or stems, then add them to the bowl with the strawberries.

Create Apple Stars

  • Slice the apple into rounds about 1/4 inch thick. Use a small star-shaped cookie cutter to cut out the centers.
  • Place the apple stars in cold water with 1 tablespoon of lemon juice for a few minutes to help prevent browning. Drain and pat dry.
  • No star cutter? Just cut the apple into small wedges or cubes. It will still taste great.

Toss Everything Together

  • Add the apple stars to the bowl and gently toss everything together.
  • For a little extra brightness, you can add a small squeeze of fresh lime juice or orange juice right before serving.

Chill and Serve

  • Cover the bowl and refrigerate for at least 30 minutes before serving. This gives the fruit time to chill and makes the salad even more refreshing on a warm day.

Notes

Optional Add-Ins:
  • extra strawberries or blueberries on top for a fuller serving bowl
  • fresh mint leaves
  • a little lime juice
  • a little orange juice
