Easy carrot side dish

This 3-ingredient carrot slaw is crisp, refreshing, and naturally sweet without being overloaded with sugar. Plus, it takes just minutes to prepare!

Ingredients

  • 4 large carrots about 1 ¼ lbs
  • 2 tbsp fresh lemon juice
  • 1 grated apple or 1 tsp sugar (to taste)
  • Optional: A pinch of salt, a bit of chopped parsley, or a spoonful of plain yogurt

Instructions

  • Wash and peel the carrots and the apple, then grate them using the medium or small holes of a box grater. You can also use a food processor with a grating attachment.
  • The salad on the photos is grated using large holes because my guests prefer to eat it that way, but for majority of kids, the small holes will be best!
  • Drizzle with fresh lemon juice and mix well. Want to make it extra creamy? Stir in a spoonful of plain yogurt for a mild, tangy twist.
  • Taste and decide if you’d like to add a pinch of salt or a little parsley for extra flavor.
  • Serve immediately for the best taste and texture!

Notes

The quality of ingredients will make a huge difference in the taste. I recommend fresh, organic carrots that are firm and vibrant in color.
For the apple (and I recommend adding an apple instead of sugar, especially if the carrots are not juicy), I recommend a sweet variety like Fuji or Honeycrisp best.
