Easy carrot side dish kids will actually eat
Let’s be honest – getting kids to eat vegetables can feel like negotiating a peace treaty. But what if I told you there’s a simple, fresh, and slightly sweet side dish that kids actually enjoy? This 3-ingredient carrot slaw is crisp, refreshing, and naturally sweet without being overloaded with sugar. Plus, it takes just minutes to prepare!

Carrot salad ingredients
- 4 large carrots (about 1 ¼ lbs)
- 2 tbsp fresh lemon juice
- 1 grated apple or 1 tsp sugar (to taste)
- Optional: A pinch of salt, a bit of chopped parsley, or a spoonful of plain yogurt
Since this side dish is super simple already, the quality of ingredients will make a huge difference in the taste. I recommend fresh, organic carrots that are firm and vibrant in color.
For the apple (and I recommend adding an apple instead of sugar, especially if the carrots are not juicy), I recommend a sweet variety like Fuji or Honeycrisp best.

How to make a carrot salad
1. Wash and peel the carrots and the apple, then grate them using the medium or small holes of a box grater. You can also use a food processor with a grating attachment.
The salad on the photos is grated using large holes because my guests prefer to eat it that way, but for majority of kids, the small holes will be best!

2. Drizzle with fresh lemon juice and mix well. Want to make it extra creamy? Stir in a spoonful of plain yogurt for a mild, tangy twist.
3. Taste and decide if you’d like to add a pinch of salt or a little parsley for extra flavor.
4. Serve immediately for the best taste and texture!
